Daikon and Carrot pickles

I've been trying to figure out the marinade my favorite pho restaurant uses on their vegetables. Last night the owner referred to it as a pickling juice and mention daikon. Those terms helped me google what I'm hopeful will lead me to a copycat of what they serve. I actually asked the guy if i could get a job at the restaurant. he just laughed. Hoping to try this recipe this week!
