Had this tonight and it was awesome:
Ethiopian lentils:

--in place of the fresh ginger and berbere spice-- I approximated 1tsp ginger, 1 tsp coriander, 1/2 tsp allspice, 1/4 tsp cloves, salt (1 teaspoon, don't be stingy!), pepper, dash of cayenne. The flavor was right on!!

Quick injera: (someday I will try the more traditional method)

Serving suggestion:
Place injera on plate, put mound of lentils, cardamom spiced rice (just cook your rice with the seeds from 6 pods, and doing forget to season your rice!), diced tomatoes. Garnish with cilantro. Would love to add another side to this dish...
some more dishes to add to the feast...http://www.thestar.com/life/food_wine/2014/02/21/how_to_make_an_ethiopian_vegetarian_feast.html
