Mexican Delight

This has been one of my favorite recipes since I was a kid. We have it on a regular basis here; and anytime we have guests over, I'm pretty sure it becomes one of their favorite meals too!

- 1 lb ground beef, browned
- 1 medium onion*
- 1 6-oz can tomato paste
- 1 8-oz can tomato sauce
- 12 oz of water (fill the paste can up with water twice)
- 2 tablespoons sugar
- herbs: 2 cloves garlic minced, 1 teaspoon each: accent (i never use), oregano, chili powder, salt, cumin
- 1-2 cups cooked rice

Toppings:
- frito corn chips
- tomatoes
- lettuce
- avocado/guac
- sour cream/plain yogurt
- shredded cheese
- green onions
- seriously just use whatever taco toppings you like (olives, salsa, peppers, whatever!)

Directions:
mix all ingredients together except rice and heat through 20-30 minutes so flavors mix together (less time is fine too if you're in a hurry). Add rice at the end and cook just long enough to heat through.

Serving
- place chips on plate, plop meat on top and throw the rest of the toppings on.
- also works as taco/burrito filling

*to be honest, i don't really understand why people specify onion sizes. i don't even know what that means. to me, the more onions the better!
