These babies are not. Here is the basic recipe that I used (It doesn't specify how many pecans, 1/2 to 1 cup should probably be fine).

When I made them I wanted almond cherry poppyseed scones so instead of the maple extract, I used almond. Instead of pecans I chopped up a cup of dried cherries. And I added the small amount of poppyseeds I had left but 2 tablespoons would be a good amount.

Also, I only had a cup of cream and I made up the difference with 1% milk--the scones still came out amazing. Since cream is expensive, I think this is a reasonable substitution while still getting great results.

I froze the scone dough overnight and baked them in the morning.

I used milk in the glaze as well.

Scone:
4 1/4 cups All-Purpose Flour
2 1/4 Tbsp Baking Powder
1 tsp Salt
2/3 cup Light Brown Sugar
2 3/8 cups Heavy Whipping Cream
1 1/2 tsp Maple Extract

Glaze:
2 cups Powdered Sugar
1/4 cup Heavy Whipping Cream
1/4 cup Maple Syrup
1 tsp Vanilla Extract

1. Mix together the flour, baking powder, salt, and brown sugar. Add the pecans.

2. In a separate bowl, stir together 2 3/8 cups heavy whipping cream and the maple extract. Once combined, use a stand mixer to mix the wet ingredients into the dry ones until just combined.

3. Line a 9” round pan with plastic wrap and press the dough into the pan. Refrigerate 1 hour.

4. Preheat oven to 375*F.

5. Take the dough out of the pan and cut into 12 wedges. Separate and arrange the wedges on one or two cookie sheets.

6. Bake the scones for about 25 minutes, or until golden brown. Let cool.

7. Mix together the powdered sugar, 1/4 cup heavy whipping cream, maple syrup, and vanilla extract to make a glaze. Using either a spoon or a pastry bag, drizzle the glaze over cooled scones.

8.Enjoy!

My changes: 1.5'ed the recipe, very liberal with spices (ginger 2tbsp, allspice 1 tsp, cloves 1 tsp, cinnamon-2tbsp, etc), and I only baked the cookies for 7 minutes. I used regular brown sugar because that's what I had.

I loved rolling the dough out the night before and having all the dough ready for the kids to just cut the dough.

We used this amazing frosting recipe with rum extract instead of almond:
I used this tutorial. It was easy to follow. My fabric was not stretchy so I had to make the skirts bigger than her equation. Also, I used elastic for the waist band instead of the skirt material.
I will try to remember the modifications I made as best I can even though it was almost a month ago!

http://addapinch.com/the-best-white-cake-recipe/

1 cup (2 sticks) butter, softened
½ cup vegetable shortening
3 cups granulated sugar
5 eggs, room temperature
3 cups all-purpose flour
4-serving instant French vanilla pudding mix
2 teaspoons baking powder
¼ teaspoon salt
1/2 cup sour cream--add a little cream or whole milk to thin it out
1/2-1 cup blueberry puree (eyeball amount to get the right consistency, honestly I probably used the entire pint of blueberry puree...)
2 teaspoons vanilla extract

Also, I used 3 pints of fresh blueberries.

Follow the instructions about the same, cooking time will probably be longer but I always start with the original cooking time minus 5 minutes and go from there.

Once called have cooled, I wrap them and put them in the freezer!

Blueberry puree: put a pint of blueberries in a saucepan with a spoonful of sugar and a little water. Heat until berries are bursting and I can mash then with the back of my spoon.

To assemble cake I made a blueberry buttercream using a buttercream recipe I have and adding some blueberry puree (2nd pint of berries!). I was very careful with how much puree I added to the buttercream because i did not want it too thin.

I take one cake out of the freezer and frost with thin layer of buttercream. Then I took a 3rd pint of blueberries and covered the cake with fresh berries. Then I pour the extra puree leftover from the buttercream on top of all the berries. It was a delicious mess. Then I got the second cake from the freezer and frosted the bottom and placed it on top of the first layer. Then I frosted the whole cake with another thin layer because I put fondant on top to make it a purple blueberry jasmine cake. But if you skip the fondant, just use the rest of the buttercream to frost a beautiful cake. Keep in fridge if it's for the next day, or on the counter if for the same day.

Good luck!

She has been wanting a new reading lamp and clock for her birthday so of course she needed a new night stand. It's not pretty but at some point I will fill in holes and paint it. This was made from the left over wood from the two bed frames I bought to make my two ottomans. I also made a martial arts belt display from it. There is still some wood left over, I wonder what else I can do with it?!

Had this tonight and it was awesome:

Ethiopian lentils:

http://www.myrecipes.com/m/recipe/spicy-ethiopian-red-lentil-stew
--in place of the fresh ginger and berbere spice-- I approximated 1tsp ginger, 1 tsp coriander, 1/2 tsp allspice, 1/4 tsp cloves, salt (1 teaspoon, don't be stingy!), pepper, dash of cayenne. The flavor was right on!!

Quick injera: (someday I will try the more traditional method)

http://m.cookingchanneltv.com/recipes/quick-injera.html

Serving suggestion:

Place injera on plate, put mound of lentils, cardamom spiced rice (just cook your rice with the seeds from 6 pods, and doing forget to season your rice!), diced tomatoes. Garnish with cilantro. Would love to add another side to this dish...

Last night the owner referred to it as a pickling juice and mention daikon. Those terms helped me google what I'm hopeful will lead me to a copycat of what they serve. I actually asked the guy if i could get a job at the restaurant. he just laughed. Hoping to try this recipe this week!

I love this 5-grain hot cereal and my family has recently started loving it to. which means i have to share with them now. which means i have to make it more often. The recipe above uses measurements of grains before they are milled but since I like to keep these flours on hand, I thought I better just write out the recipe with the conversions for my own convenience:

1 cup oat flour

1 cup barley flour

3/4 cup brown rice flour

1/2 cup whole wheat flour

1/2 cup cornmeal

I like to make a big batch of this mix and store it in #10 cans. A triple batch fits into one #10 can. Also, I haven't been able to find barley lately so I am subbing in buckwheat flour.

Her instructions for cooking:

In a small saucepan combine the cereal and cold water. You
use cold water because it prevents lumps. Add the salt and
juice concentrate. Bring to a boil over high heat.
Reduce the heat to medium low and simmer for about 3 to 5
minutes. Serve with milk. Makes 1 serving.

To make 4 servings: use 1 cup of 5
Grain Cereal, 3 cups of cold tap water, 1/4 teaspoon of
salt, and 1/3 cup apple juice concentrate.

I never use apple juice. instead, I throw in some butter and brown sugar and a little milk/cream. No wonder everyone loves it! Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-9134288461997633740.post-22989789671352577832015-07-16T17:48:00.001-07:002015-07-16T17:48:17.116-07:00Knick knack for a seamstress
I've been looking for a knick knack shelf for a while now for my thread. I am finally posting (and using) the recipe for the first time since she emailed it to me a year ago--only because I don't make cookies very often and I always forget to stock up on the secret ingredient: pudding mix. Anyway, this week I am going to experiment a little with the flavors--I got pistachio pudding mix to mix with craisins and chocolate pudding mix to mix with marshmallows and white choc chips.

2 1⁄4 cups flour

1 teaspoon baking powder

1 cup (2 sticks) butter

3⁄4 cup brown sugar

1⁄4 cup white sugar

1 teaspoon vanilla

1 pkg. (4 serving size) vanilla INSTANT pudding*

2 eggs

1 12 oz. pkg. Chocolate chips (about 2 cups)*

1 cup nuts (optional)

Mix flour and baking soda. Set aside. Combine butter, the sugars, vanilla and pudding mix in a large bowl. Beat until smooth and creamy. Beat in eggs. Add flour mixture, then stir in chips and nuts.
Drop by teaspoonfuls about 2” apart onto ungreased cookie sheets. Bake at 375o for 8-10 minutes. Bake less time to keep them soft.

*May substitute chocolate instant pudding and white chocolate chips.
*May use Reese’s Pieces or M&M’s instead of chips.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-9134288461997633740.post-13951303777088108502014-03-12T12:29:00.000-07:002014-03-12T12:29:17.781-07:00If You Like Pina Coladas...come with me and escape this endless winter! I've been dreaming up a pina colada pie for several months now and I haven't quite found the right recipe yet. So I came up with my own. Also, I decided to invite a friend over who is currently gluten and dairy free and I thought this pie would be the easiest to make for her. Oh, and it's Mormon-style--so no alcohol, just extract here!

Crust:

3 cups sweetened coconut
2 tablespoons ground flax seed
zest of one lime
a squeeze of 1/2 a lime
1/2 cup coconut oil, melted

Mix zest, flax, and coconut together. Stir in lime juice and coconut oil. Press into a pie plate. Bake at 325F for 10-15 minutes--the crust should be golden brown around the edges.

Filling:

1 cup sugar
1/2 cup cornstarch
pinch of salt

13.5 floz can of coconut milk (about 2 cups)
20 ounce can of pineapple tidbits or crushed pineapple--I pureed mine

2 tablespoons coconut oil
1/2 teaspoon coconut extract

Whisk sugar, cornstarch, and salt in a large pot (you don't want any lumps). turn on heat to medium high and whisk as you slowly add coconut milk and pineapple puree. Continuously whisk without any distractions--NO INSTAGRAMMING! :) --until mixture begins to boil. It should be thick. Remove from heat and add coconut extract and coconut oil while still stirring. Stir until c. oil is completely melted and incorporated. Pour into a glass bowl and put wrap over it, directly on the surface of the pudding. Chill in fridge until set. Once, cool, transfer to pie crust.*

Meringue--Haven't made it yet but just a typical meringue with rum extract.

*I poured my filling straight into the pie crust without letting it cool first. So this part of the directions is what I would do differently if the crust ends up being soggy :)
The plans I am using are from Ana White's blog (she is my hero!) but I have to make quite a few tweaks to the plan since I'm using pallet wood. But I've been working on a few projects that i'm really excited about. A couple weeks ago a friend of mine said her carpet company had at least 60 pallets they were trying to clear out of their warehouse. So I've driven over a couple times and loaded my car up. I wanted to make a captain's bed (storage shelves under the bed and shelved headboard) for Noah. I started the project pretty haphazardly but I've slowly been accumulating tools which has helped considerably. The phase of her playing then cleaning up her room and then turning the light off and then tucking herself in bed was way too short. Like 3 days. Often she will wake up at 2 am to go potty and then play for a few hours. Weve looked all over for baby proof light switch covers and there isnt anything we are too impressed by. I found a DIY blog post and so we tried that, although it was still pretty easy for min to turn the light on. This is what we came up with.

Take a shampoo bottle. Cut off the top. Carefully cut a rectangle out of the back for the light switch to fit into. Figure out where the screw holes should go. Poke smaller holes on the back side. Poke holes on the front side big enough to fit your screwdriver through to screw the shampoo bottle into place. Make sure the opening is facing up and not down.

Also this only works if you don't have anything in the room to stand on--of course Maren figured it out in one day. So she doesn't get to have her baby doll crib in her room at night.

<div class="separator"style="clear: both; text-align: center;">
Unknownnoreply@blogger.com3tag:blogger.com,1999:blog-9134288461997633740.post-9623440728931742022012-12-23T13:21:00.000-08:002012-12-23T13:21:05.955-08:00Chocolate ginger cookiesthese are so yummy!
This recipe was a hit at a few different festive events:

Cranberry Jalapeno Relish

I made a couple changes
- No mint
- I added an extra jalapeno because after tasting it, it just didn't have enough kick. Next time I will start with 1 jalapeno and leave the seeds in. Because even the 3 jalapenos I used seemed weak.

Serving Suggestions:

- Pour a generous amount on top of cream cheese and serve with wheat thins (or cracker of your choice)

- Pair with a baked brie (I put the relish on the brie and then wrapped the whole thing up in puff pastry. but you could serve in on the side after baking as well)

- I imagine this would go really good with pork chops or maybe even chicken or turkey. if you like that sort of thing.

Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-9134288461997633740.post-57896080615045344012012-11-02T13:00:00.002-07:002012-11-02T13:00:50.021-07:00Sweet potato and melted onion pizzaThis is really yummy. I got the idea here and the recipe for melted onions here. I sliced half of a sweet potato really thinly using my mandolin slicer. I wanted to make sure they were done enough so I lined a small cookie sheet with foil and smeared it with olive oil. Then I put the potatoes on one layer deep. I brushed the tops of the potatoes with oil too. I stuck them in the oven for about 12-15 minutes.

For the onions, it says 45 minutes but I would give yourself at least 1 1/2 hours or even 2. They are really low maintenance. I didn't have that long so I turned the heat up and stirred the stuff occasionally.

I prebaked my crust and then spread the onions all over and placed the potato slices on top. I litely sprinkled feta, parmesan, and shredded cheese (mexican blend, I think) on top--not like you would a regular pizza though.

It is really good. Don't be deterred by the onions--when they are cooked this way, they have a really mild flavor.

I also made a spinach and fresh tomato pizza. I coated a half-baked pizza crust with olive oil, chopped up a bunch of spinach and added that next. and placed thinly sliced tomatoes all over. Then sprinkled with feta. I cook it for about 8 minutes more. It's a really nice, fresh pizza.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-9134288461997633740.post-56782848180525970762012-10-15T19:18:00.001-07:002012-10-15T19:18:53.690-07:00How to make a light saber for 5 bucks or lessSupplies:

Flashlight (about 1" or 1 1/2" diameter)

Smart Water bottle (the plastic is nice and smooth)
Red, green, or blue tissue paper
clear packing tape

Directions:

1. Drink water (or dump it out)

2. Cut top and bottom off of bottle and take the label off. Then cut the bottle down the length of the bottle. Then cut the bottle in half long ways. You should have two long pieces of smooth plastic.

3. Take one layer of tissue paper and adhere it to the label adhesive on the plastic as smoothly as you can.

4. Curl up one piece of covered plastic to fit around the head of the flashlight. I used rubber bands to the plastic curled while I used the tape to tape around the entire tube. Note: I did not attach it to the flashlight. Then I took the second piece of plastic and added to the length of the first. tape that. The tissue paper should be fully covered with tape to keep it rain-proof. I left a hole at the top so that it still works as a flashlight.
I decided to leave the tube non-permanently connected to the flashlight so I can add more batteries as necessary If it falls off, I can just shove it back on but it hasn't been a problem so far. This thing is fairly sturdy--especially compared to the $10 and $20 dollar ones you can buy at the store. Plus, to make a new one, all I have to do is buy a new water bottle :)
Most importantly, Noah thinks it is the coolest thing in the world right now. Right along with the hooded robe and yoda hat I made for his Halloween costume.
